Pneumatage - How it Works

Pulsair “Pneumatage” is an innovative and proven method for efficiently managing grape skin caps during red wine fermentation and wine blending.

The Pneumatage process works by pulsing large bubbles of compressed air or gas near the bottom of the fermentation tank. The rising bubbles provide uniform temperature, keep yeasts healthy, and efficiently wet the cap to enhance the extraction of flavor, tannins and color into the juice. This process maintains freshness, reduces bacteria formation and helps expel unwanted wine mercaptans and volatile sulfur compounds. Unlike other methods, Pneumatage breaks up the cap into individual berries and circulates them in the juice, which keeps the cap in a semi-loose state making it easier and more efficient to regularly manage the cap.

How the Pulsair “Pneumatage” Red Wine Fermentation Process Technology Works

Pulsair uses Pneumatage method  to refers to management of the grape cap that is formed during red wine fermentation. In this application, a large Pulsair bubble is introduced beneath the wine cap in a fermentation tank.

The bubble can be introduced from the top of the tank by using a hollow metal probe, near the bottom of the tank through a racking port, or through permanent risers installed at the tank bottom. With a few pulses, the bubbles breaks through the cap and stirs the fruit into the must.

All the parameters associated with the formation of the bubble (pressure, frequency and duration of pulses) are adjustable.
